For my little corn intolerant toddler, foods get boring very quickly. The problem with this is that he is also very picky when it comes to trying new foods…. So I have to get very creative with familiar foods to get him to put it even remotely close to his lips. Chicken nuggets? Yeah, those were a great go-to food for us, until suddenly not so much. So, instead of making a giant fried mess for absolutely no reason, since someone isn’t going to eat them anyway, I wanted to try a different route. In comes bacon.
If I can’t get my kiddo to eat anything, I can always get him to eat bacon. I mean, it is pretty much the most delicious of the meats, so who can blame him?
Now, to make these corn-free, or corn lite at best, I used organic chicken tenders, which I washed thoroughly, uncured, additive free bacon, and organic dijon mustard made with apple cider vinegar (white distilled is made from corn). If you are corn intolerant, you will know what will work for you and what will not, so use your best judgement.
Homemade Dijon Vinaigrette
Cover those tenders with deliciousness
Make it easy on yourself, just pick the chicken up by pinching it between a slice of bacon.
Baked and sizzling!
- 1 Tbsp prepared organic Dijon mustard made with ACV
- 1 Tbsp Bragg’s Apple Cider Vinegar
- 3 Tbsp organic avocado oil or olive oil
- 1 package organic chicken tenders, thoroughly washed and patted dry, cut in half
- 5 slices uncured bacon with no additives, cut into thirds
I would love to say that the picky toddler gobbled them up, but…. he peeled the bacon right off and ate it, leaving the delicious chicken behind! <sigh…> Ha! One can only try!
I, on the other hand, thought they were awesome, especially on top of a salad.
