I know, I know, not technically cookies, but once you cut them up and take a bite, you won’t care. I just tried this recipe because I thought it would be a yummy treat to send off with my son Trent to college.
1 cup butter
1 1/2 cups oatmeal
1 cup sugar
1/2 cup brown sugar
1/4 teaspoon salt
2 teaspoons cinnamon
2 cups flour
2/3 cup sugar
2 tablespoons lemon juice
5 tablespoons flour
1 teaspoons cinnamon
Preheat oven to 350 degrees. Prepare you baking dish, my lining a 9 x13 pan with foil and spraying with cooking spray.
Start your crumble mixture by melting the butter in the microwave and then add in all remaining ingredients and stir. Use a fork and break up into small pieces. Reserving about 2 cups, place into the bottom of the baking dish and with a fork, smash down the mixture, creating a pretty firm crust.
For the blueberry layer, combine all ingredients in a bowl and then place a single layer over the crumb crust.
Using the remaining crumble mixture, place over the blueberry layer.
Bake in the oven for about an hour, maybe a little longer, just until the juice from the berries start to bubble. Let cool and slice into bars.
